Large coffee corporations have a problem... their very size dictates that they must buy from lower-altitude, factory-style farms. While companies like Starbucks do work hard to create their own smaller farms, the reality is that the entire yearly output of even a medium farm would barely provide coffee for a Manhattan store for a week. Large farms are generally found at lower altitudes where logistics are reasonable for bringing in large trucks. So they start with a lower-quality Soft Bean product, and are prone to bad practices like abusing workers and the land. We source only from small farms, who tend to be naturally organic (they can't afford expensive fertilizers and pesticides, lol) and have a "designed" approach to their higher-altitude terrains, meaning they optimize varietals for the natural vicissitudes of the micro-climates on their land. They generally hand-pick in multiple batches rather than machine-strip ripe and unripe berries. They tend to integrate patches of land for the natural fauna and flora to flourish. It's simply better coffee, and better for the planet. |

We roast using electric "fresh air" roasters and have a niche specialty of fire-roasting. Both processes are performed with a high exchange of natural air without concentrating heat and fumes on the roasting compartment like typical gas-fired roasters. Natural gas has odorants added for safety. We don't like that. We can taste the difference in our fresh-air roasting and so can you. And it's ecologically superior. 3. Creativity. We have 20 years experience in developing unique multi-temperature, low-temperature, extended development-time techniques and more. And Len's 20 years of experience in coffee blend design create integral matchups within the blend and wonderful food pairings. Competitors cannot duplicate our uniquely delicious coffees. 4. Len is a recognized expert in this field. He has influenced the industry to appreciate other species of coffees beyond Arabica, and has reached out to the public to teach and assist them to do home-roasting as a fun and rewarding hobby. The Blue Sky In working on commercial enterprises, we often provide coffee under the Len's Coffee identity but also the OEM "blind" identity of Fanega Coffee. This brand name comes from a happy "meme" in the world of coffee pickers. We have picked with the workers in Central America and we see that although their work is hard, they often enjoy beautiful surroundings and feel at one with nature. As they pick the coffee bounty, they fill small boxes called cajuelas, which are emptied into a larger box called a fanega. They loved to tease us "gringos" for our clumsy hands and slow production, while they literally picked circles around us. When they pick enough cajuelas to fill a fanega, they know it will be Good Pay Day. Let's pick a lot of fanegas! Metaphorically speaking.
